Understanding the  Food Information Regulations (FIRs 2014)

There are big changes to the information that food businesses must give to their customers. From 13 December 2014, the EU Food Information for Consumers Regulation (EU FIC) came into force. These European rules will be enforced in the UK by the Food Information Regulations 2014 (FIR). FIR will change the way you and your staff provide information to your customers.

Allergy and intolerance:

These courses are designed to help food businesses provide information to customers who need to avoid certain ingredients because of an allergy. It includes the new allergen information rules (EU FIC), general advice and information on allergy and intolerance, and specific voluntary best practice guidance on cross-contamination controls for pre-packed foods and loose foods.

Level 2 Award in Food Allergen Awareness & Control in Catering (HABC)

  • awareness of foods that most commonly trigger an allergic reaction
  • understanding of practical allergen management based on the process of risk analysis.

HABC Level 3 Award in Food Allergen Management for Caterers

Gaining this qualification you will know and be able to apply the knowledge relating to the control of food ingredients, including allergens, at all stages of food purchase and production. You will understand the process for ensuring that accurate ingredient information is available for consumers at point of sale and service and the importance of communication at all stages.
